how to make Chocolate Raspberry Cheese Cake

Recipe

Cake
• 2 (3 ounce) packages cream cheese, softened
• 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
• 1 egg
• 3 tablespoons lemon juice from concentrate
• 1 teaspoon vanilla extract
• 1 cup fresh or frozen raspberries
• 1 (6 ounce) packaged graham cracker pie crust


Glaze
• 2 (1 ounce) squares semisweet chocolate
• 1/4 cup whipping cream

first off, you want to remove any jewelry. rings, bracelets, long necklaces. secondly wash your hands!
next you'll want to preheat your oven to 350, i do mine to 365 because mine runs cold. make sure you have an inside the oven thermometer because you can't trust what the ovens computer says!

bring your mixer out, i personally own a stand mixer so this is very easy for me, and place the SOFTENED cream cheese in. whip for about 10 minutes at a medium setting. or until it looks similar to marshmallow fluff.
to soften cream cheese put in microwave for 15-20 seconds on high

once finished slowly add condensed milk. i add about 1/2 then 1/4 then the final 1/4. again mix on medium setting.
i suggest you try the condensed milk, it's like pure sugar.

add 3 tablespoons of lemon juice, 1 teaspoon of vanilla extract, and one egg. mix well. i'd say a low setting.

as it's mixing i arranged the raspberries i used about 1 1/4 packed of 6oz packages, the recipe calls for 1 cup.

finally~ pour batter over raspberries slowly.
bake for 30-35 minutes or until set.
i had batter left over so i made two little cheese cake cakes. i baked them for 20 minutes at 350 as well.

DO NOT start glaze until AFTER cake is out of the oven and has been cooling for a long time or it is fully cooled. i wouldn't start until it is fully cooled.

in a small saucepan melt semi-sweet chocolate with whipping cream over low heat, cook and stir until thickened.
do not turn it up! low and slow is the way to go~

chill- and garnish and desired.

i know this is late- but you chill it over night so the glaze hardens.
take it out and garnish after about half an hour of chilling.
and then when i dropped it off at Sammy's house i ended up hanging out at her house for a lot of the night. then came home and went to sleep because i was so tired.
she said the cheesecake was delicious.
